
Shravan is a month where most of the Hindu Maharashtrians and other religions in India keep fast to seek blessings of Lord Shiva, Goddess Parvati and Lord Ganesha and thus having only strict vegetarian food on their plate for a month or so. Therefore, BonGappétit has come forward to share this very special and simple recipe with their readers and learners so that having vegetarian food every day doesn’t seem like a boring and exhausting task to anyone, so go ahead and bless your taste buds with this amazing Paneer Pulao (or Pilaf) recipe that we brought to you in this post.

A very subtle and straight forward recipe to cook on any day when you just want to go clean on eating chicken and fish but also want something deliciously fine and light on your plate, That’s when Paneer Pulao (Pilaf) comes into picture. The green vegetables and paneer eventually makes this dish not only delicious but also very healthy as well. This dish is best served with very simple homemade fresh dahi (curd) or Dal Fry. So here we go….

Ingredients:

Paneer (Cottage Cheese) | 250 gm |
Basmati Rice | 500 gm |
Green Peas | 200 gm |
Carrots (finely sliced) | 2 whole |
Cauliflower | 200 gm |
Green Beans (45° diagonally sliced) | 150 gm |
Onions (finely sliced) | 2 whole |
Cashew Nuts | 10-12 broken pieces |
Brown Raisins | 14-15 |
Cinnamon | 1-2 pieces |
Green Cardamom | 4 |
Black Cardamom | 1 |
Cloves | 8-9 |
Black Peppercorns | 10-12 |
Bay leaves | 2 |
Cumin Seeds | 1 tsp |
Turmeric Powder | 1 tbsp |
Red Chili Powder | 1 tbsp |
Garam Masala Powder | 1 tbsp |
Lemon | 1 |
Ghee | 1 tbsp |
Salt | As Per Taste |
Sugar | 1-2 tbsp |
Red-Orange Color (Optional) | 1 pinch |
Vegetable Oil | To Cook |
How To Cook :
Step 1 : Heat oil in a wok, add fresh cottage cheese (Paneer) in the oil, stir fry till they are little brown but still completely white in color. Once done, transfer it in a bowl and keep it aside.



Step 2 : Add 1 tbsp ghee in the heated oil in a wok/pot, add whole cumin seeds, cinnamon, green cardamom, black cardamom, cloves, black peppercorns and bay leaves in the oil. Saute for 1-2 minutes till the seeds changes color on high flame.


Step 3 : Add broken cashew nut pieces and raisins in the wok. Cook till the nuts are fried and the raisins bloat like tiny balloons over a high flame.


Step 4 : Add finely sliced onions in the ingredients, saute till it turns translucent, (do not completely fry and make it brown). Once done, transfer the whole ingredients (nuts,whole spices and onions) in a plate and keep it aside.



Step 5 : Add 1-2 tbsp more oil in the wok, add vegetables- green peas, green beans, carrots and cauliflower. Stir fry them in the wok for about 4-5 minutes over a high flame. Sprinkle salt, sugar, red chili powder, turmeric powder and garam masala powder in the vegetable. Mix well




JiStep 6 : Add the fried onions, whole spices and nuts (that was kept aside) to the vegetables in the wok. Mix well over a high flame.


Step 7 : Final Step, add Cottage Cheese (Paneer), cooked basmati rice and colored rice(optional) to the vegetable ingredients in the wok over a medium flame. Mix well, Saute carefully, do not break or crush the paneer and rice while mixing over a medium flame for 5 minutes. (Colored rice are optional)


Step 8 : Squeeze half cut lemon over the pulao and pour 1 tbsp ghee evenly. Mix well and turn off the flame.




Step 9 : Serve Hot with fresh curd or dal fry.
