Chicken Broccoli Stir Fry

Chicken and Broccoli Stir Fry satisfies the craving of eating something delicious but healthy at the same time and honestly you’ll feel good about serving this to your family. It’s loaded with tender chicken, mushrooms and fresh broccoli.

The sauce in this broccoli chicken stir fry is perfectly “saucy,” making it ideal for serving over steamy white rice. Homemade Chicken and Broccoli is an easy 30-minute meal and the best part about this recipe is that you literally make everything from scratch right in front of your eyes in just few minutes of time and boom! the dinner will be ready to be served in 30 minutes. Zero Sweat!

Since stir fry is essentially flash cooked on a very hot skillet (less than 15-20 minutes of cooking time). This recipe moves step-by-step, so you want to have every ingredient chopped, measured, prepped and ready as per the instructions given below before you fire up the skillet. Good luck!

Chicken Broccoli Stir Fry

Chicken Marination Ingredients:

(bonesless – cut into medium size cubes)

Black Pepper Powder1/4 tsp
Lemon Juice1 tsp
White Vinegar3 tbsp
Olive Oil1 tbsp
*tbsp-tablespoon; tsp-teaspoon*

Ingredients To Make Stir Fry Sauce:

Chicken Broth200 ml
Soy Sauce3 tbsp
Black Pepper Powder
(freshly grounded)
1/4 tsp
Honey
Substitute: Brown Sugar
2 tbsp
Garlic (grated)1 tsp
Ginger (grated)1 tsp
White Sesame Powder or Oil (Til)1 tbsp
Corn Starch 1 tbsp
*tbsp-tablespoon; tsp-teaspoon*

Other Ingredients:

Onions (sliced)2 medium size
Broccoli (cut into florets)250 g
Mushroom (medium-sliced)200 g
Salt1/2 tsp To Taste
Sesame SeedsTo Garnish
Olive Oil3 tbsp
*tbsp-tablespoon; tsp-teaspoon*

Preparation:

  • Marinate the boneless- chicken (breast) with the ingredients specified above. Set aside for 15 minutes.
  • Either Bake the chicken pieces at 200° for 8 minutes OR pressure cooker to 1 whistle. (This way, the marinated chicken pieces will release water which is going to be used as Chicken Broth to make our Stir-Fry Sauce in the next step)
  • Pour the Chicken Broth -(the water separated from the marinated chicken pieces while baking) in a bowl, add soy sauce, vinegar, sesame powder, black pepper crushed, honey, ginger-garlic grated and corn-starch. Whisk them all together. Stir-Fry Sauce is ready.
  • Slice onions, broccoli and mushroom accordingly and set aside for later.

How To Cook:

Step 1: In a heated pan, pour 3 tbsp olive oil, add the sliced onions, fry 2-3 minutes on medium heat till translucent.

Step 2: Add Broccoli , fry 7-8 minutes over medium flame, once the broccoli is cooked, add mushrooms. Fry 7 minutes over medium flame. Sprinkle 1/2 tsp salt. Sauté over low-medium flame until its light brown.

Step 3: Pour in the Stir-Fry sauce as prepared earlier, (stir the sauce before pouring in to the pan). Cook the sauce 5 minutes over medium flame. Cover & Cook 5 minutes on medium-low flame.

Step 4: Add in the baked chicken pieces. Mix with the sauce. Adjust the consistency of the gravy as per your desire. (if you want the gravy consistency to be dried, just simmer for few more minutes before turning off the flame)

Step 5: Garnish with sesame seeds & turn off the flame. Serve hot with rice or roti.
