Spicy Chili Chicken

A very popular and simple chicken recipe often cooked in every Indian households. ‘Spicy Chili Chicken’ is a very common dish cooked in India and enjoyed by most of the people especially children, chili chicken is one of the best food item. What makes this dish so popular and desirable is its easy and quick making process with minimal ingredients that are mostly always will be available in your kitchen at your finger tips. The chicken cooked in this spicy gravy are initially baked instead of frying which makes it so succulent and juicy, the bell peppers are moderately cooked at the end and the sauces are carefully balanced to give you that perfect and authentic Indo-Chinese flavor on your plate. A short introduction : “Chili Chicken” is a popular Indo-Chinese dish of chicken of Hakka Chinese heritage. It is said to have been invented in 1975 by Nelson Wang. Wang described his invention process as starting from the basic ingredients of an Indian dish, namely chopped garlic, ginger, and green chilis, but next, instead of adding garam masala, he put in soy sauce, followed by cornstarch and the chicken itself. – google

Chili Chicken consists cholesterol but it also contains that supports in reducing cholesterol. So, if you pick the chicken pieces and bake them in the oven before cooking it in the gravy without dropping butter or oil, it would be healthy for heart. We bake instead of fry because frying is not very healthy.

Chicken Fried Rice -Authentic Restaurant Style Recipe

Cooking Time : 25 minutes.

Green Chilies Chopped3-4
Dark Soy Sauce2-3 tbsp
Red Chili Sauce2 tbsp
Green Chili Sauce1 tbsp
(Veeba) Sweet Chili Oregano Sauce(Optional)1 tbsp
Green Bell Peppers (Medium Sliced)2 large
Onions (Sliced Medium in Petal Shape) 2 large
Spring Onions (chopped)1 small bowl
SaltAs Per Taste
Corn Starch2 tbsp
White Sesame SeedsFor Garnish
Spring Onion Green Portion (optional)For Garnish

Marination Ingredients :

Boneless Chicken Pieces250 gm
Egg1
Corn Starch1 tbsp
Ginger Shreds/Paste1 tbsp
Garlic Shreds/Paste1 tbsp
Green Chilies (minced)5-6
Soy Sauce1 tbsp
Orange Food Color (optional)2-3 drops
Salt2 tbsp/As Per Taste
Vinegar1 tbsp

Preparation :

  • Wash and cut the boneless chicken into pieces.
  • Marinade the chicken with the above listed ingredients . Mix well and set aside for 30 mins.
  • Preheat oven to 180˚ C. Grease the baking tray with some butter and put the marinated chicken over tray.
  • Put the plate/tray in the preheated oven and bake for 25-30 minutesOnce done, Remove and set aside

” Marination of the chicken adds extra flavor and balance taste to the whole recipe over all. Also baking them instead of frying the chicken in the oil is more healthier, less time consuming and makes the chicken very soft and tender compared to frying them in deep oil before cooking.”

How To Cook :

  • Step 1 : In a non-stick pan, heat oil, add ginger-garlic paste/shreds, saute over a medium-high flame for 2-3 minutes until it changes color and a nice aroma reaches your nose.
  • Step 2 : Add onion petals and chopped green chilies saute over a high flame, add salt as per taste, mix well and cook till the onions are translucent.
  • Step 3 : Add baked chicken pieces over the ingredients in the pan. Mix well with the onions and saute over a high flame.
  • Step 4 : Pour 3 tbsp soy sauce, green chili sauce, red chili sauce, (Veeba) Sweet Chili Oregano Sauce(Optional). Mix well and saute the gravy over a high flame for 4-5 minutes.
  • Step 5 : Add green capsicum and chopped spring onions over the ingredients, mix well and cover the pan. Cook for 7-8 minutes over a high flame. Stir in between.
  • Step 6 : In a small bowl, add 1 tbsp corn starch and water, mix well and pour the corn flour slurry in to the gravy. This makes the gravy thick and consistent. Add little water if required. (Let that chili chicken cook. The longer it simmers, the more the flavors will meld together.)
  • Step 7 : Stir the ingredients for another 5-6 minutes more over a high flame. Check for salt. Garnish with white sesame seeds and chopped Scallions (spring onion greens), turn off the flame. Serve hot with roti or chapatti or pair it with Chicken Fried Rice.
