
Sweet dish is a must on every (Bengali) occasion and making Simui er Payesh (also known as Vermicelli Pudding in English) is a very common thing in every Bengali household be it Rakhi Purnima (Rakshabandhan) or Janmadin (Birthday) because not only it taste super sweet and fine but also adds as a very authentic and presentable sweet dessert to the overall food menu. Also, it is considered to be the easiest sweet dessert recipe to cook with minimal ingredients and time. Trust me..!
A Quick definition of Payesh – Kheer or Payasam is called as “Payesh” in Bengali and there are many different types of making Payesh in Bengal which I’ll be sharing with you in the coming days but it is a type of pudding originated from the Indian subcontinent, made by boiling milk and sugar with one of the following: rice, broken wheat, vermicelli, or sweet corn, etc. It is then flavoured with coconut, cardamom, raisins, saffron, cashews, pistachios, almonds or other dry fruits and nuts.
The Indian Style recipe of making Simui er Payesh is as follows:
Time : 15-20 minutes
Course : Dessert
Ingredients:
Ingredients | Quantity |
Vermicelli | 100 gm |
Milk | 1 litre |
Ghee | 2 tbsp |
Sugar | 4 tbsp/ As Per Taste |
Green Cardamom (Grounded/Powder) | 2 Cardamoms |
Almond (small pieces) | 25 gm |
Pistachios (small pieces) | 25 gm |
Kesar | 1 pinch |
How to Cook:
- Step 1 – Heat the kadai/pan, add ghee and fry the vermicelli for 2-3 minutes over a low flame.
- Step 2 – Add Milk in the kadai; and boil the milk with the vermicelli in the pan for 8-10 minutes or till it thickens and reaches a desired consistency over a high flame, continue stirring; do not stop
- Step 3 – Add sugar, green cardamom powder, almond and pistachios-small pieces and a pinch of kesar to the pudding, mix them well with the vermicelli and the milk and turn off the flame.

Undoubtedly, one of the easiest dessert recipe one can make on any occasion without any stress, also it is to be noted that the taste of sugar in the pudding is always based on personal preference so make sure that you put the sugar accordingly, not too much and not too less.
