Indian Style Egg Bhurji (Scrambled Eggs cooked with Indian Spices)

How would you like your eggs to be cooked, sir? uhhh.. Scrambled maybe?! well, if you stay in India then you will get more than just simple scrambled eggs on your plate. The Indian chef in your kitchen won’t just simply let you get away without tasting the Indian version of scrambled eggs, which is – in simple words taste super scrumptious and juicy that will make your mouth water and stomach rumbling.

The word ‘Egg Bhurji’ stands for Scrambled Eggs originated from the Indian subcontinent. Its preparation lies of sautéed chopped onions, chilies and optional spices. It is usually served with Rice, Rotis or naan or Pav/Bread in Mumbai and Pune. Super easy to cook and the ingredients that are required to make this recipe are/will be easily available in your kitchen as mentioned below.

Egg Bhurji

The recipe that I’m about to share with you is my Dads very special “Egg Bhurji” recipe and I can bluntly tell you that no one can beat his style of making this recipe and therefore after a lot of convincing and sneaking I have got my hands on this recipe and so I’ll be sharing it with you. Keep it a secret between us, shhh..okay?!

Ingredients :

Red Chili Powder 3/4 tbsp
Ginger Paste1 tbsp
Garlic Paste2 tbsp
Cumin Seeds1/2 tsp
Turmeric Powder1 tsp
Coriander Powder1 tsp
Cumin Seeds Powder1 tsp
Garam Masala Powder (Homemade)1 tsp
Butter 1 tbsp
Ghee1 tbsp
SaltAs Per Taste
Sugar2 tsp
Garam Masala Powder is a home made spice blend widely used in Indian cuisine. It is a mixture of ‘Bay leaf, Ground black pepper, Ground cloves, Ground cinnamon, Ground cumin and Ground cardamom’ toasted in a pan to release their aromatic flavors, then grounded to a powder.

Preparation:

On a clean bowl , break the eggs carefully, check for any shells and keep it ready with the other ingredients as listed above. (Do not try to directly break the eggs in the pan while cooking as this makes it difficult to look for any shells that could get mixed with the other ingredients in the pan immediately.)

Main Ingredients

How to Cook:

Step 1 – Heat oil in a large pot over a medium heat. Add cumin seeds, fry till it changes color to little brownish, add ginger- garlic paste in the oil cook until the paste changes color and release an aromatic scent.

Step 2 – Mix chopped onions to the oil, stir until onions have turned translucent for about 5 minutes over a low flame, continue cooking until onions are brown for about 5 minutes more over a medium flame.

Step 3 – Add green chilies,salt, turmeric powder, red chili powder, coriander powder, cumin seeds powder and garam masala powder; stir the whole ingredients over a medium flame for 5 minutes, until an aromatic scent reaches your nose.

Step 4 – Add chopped tomatoes to the the ingredients in the pan, cook for 5 minutes over a medium flame until the tomatoes are finely mixed with all the other ingredients in the pan.

Step 5 – Final step, Pour eggs to the ingredients, scramble lightly for 10 minutes straight over a medium flame, Stir the Egg Bhurji continuously to prevent burning; add ghee and butter and cover the pan over a low flame for 5 minutes more. Serve it hot with Rice or Roti

Note : “The regular Amul Butter contains salt and therefore it is not advisable to add any more salt to the ingredients as this can make the egg bhurji too much salty”
